 1 cup dry quinoa
 300g grape or cherry tomatoes
 1 cucumber
 1 orange pepper
 3 green onions
 juice of 3 limes
 plain greek yogourt
 1 large avocado

In a small pot add 2 cups of water and 1 cup of quinoa, bring it to a boil, when boiling, cover and simmer on low heat until all water is absorbed (just like rice) when it is cooked set it aside to cool.

halve the tomatoes, dice the peppers, cucumbers and spring onions and set aside.

juice the limes and pour the juice into the quinoa, when the quinoa is cool add the veggies to the quinoa and toss well.

serve with a dollop of greek yogourt, and slices of avocado on top.
