Minted Pea Soup

This deliciously easy spring time recipe is refreshing, it can be served both hot or cold.

 2 Tbsp butter
 1 large onion chopped
 1 small head of lettuce, shredded
 2 lb thawed frozen petit pois peas
 2.5 pt (I.5 L) chicken or vegetable stock
 Lots of chopped fresh mint (to taste)
 salt / pepper (to taste)
 6 fl oz (175mL) whipping cream

In a large pot melt butter, and cook onion until it is browned slightly

Stir in lettuce, peas & mint

Add stock, boil, reduce heat, cover and simmer for 15 min

Blend until smooth (I used a little hand held blender in the pot, you can pour it into a blender then back in the pot) season to taste (back in the pot) stir in cream & reheat gently (when adding the whipping cream make sure it is not too cold as it will curdle)
