19 Aug Caprese Salad
This easy summer salad of Italian origins is naturally gluten free, the perfect showcase for your garden fresh ingredients, a fantastic addition to any meal and perfect dish to impress at your gatherings. For a quick finger food assemble it on a bamboo skewer (leave the ingredients whole for this).
300 g Cherry Tomatoes, halved
200 g Bocconcini cheese cocktail size, quartered
Fresh Basil, torn if leaves are large, left intact if small
3 tbsp Balsamic Vinegar
1 tbsp Extra Virgin Olive Oil
1 dash Salt
1 dash Pepper

In a large bowl add tomatoes, bocconcini cheese and basil.

Add Balsamic Vinegar and Oil, mix well

Add Salt and Pepper to taste
