Uncle Jacks Rum balls are a Christmas staple in our house, it just isn’t Christmas without them.

Ingredients: (ingredients are by weight)
425gr Ground Walnuts
425gr Icing Sugar
425gr Semi Sweet Chocolate
3 Egg Whites
4.5oz Rum
Instructions:
I grind the nuts and the chocolate myself using a big hand cranked nut grinder, I’m sure you can buy pre-ground ingredients or use a food processor. You want them as fine as possible.
In a large mixing bowl, mix the Walnuts, Chocolate and Icing Sugar. on a small plate put about half a cup of granulated sugar and set aside.
Line a platter or a baking sheet with candy cups (1 inch diameter)
Add the Egg and Run into the Walnut mixture, with a clean dry hand (I wear gloves) start kneading the ingredients with a clasping motion, the mixture should be moist, mucky and uniform in about 5min. Using a dull knife scrape the excess mixture off your hand and you’re ready to start rolling. pinch a small amount of mixture (enough to make a one inch ball) and roll in your hands until round. (I use a little cookie scoop, makes them more uniform)
Place in the sugar on the plate and roll it until coated and place it in a candy cup… Repeat at least 99 more times.
Cover the tray in plastic wrap and place it in the fridge. Let sit for two days to allow the rum to seep in… It does make you fridge smell like rum be warned…
