This healthy raw salad is high in fiber and protein. It’s fresh, filling, tasty and very simple to make.

1 cup of Uncooked Quinoa or 2 cups Cooked Quinoa
Juice of 3 Limes
3-5 Green Onions
2 cups Grape Tomatoes
1 Orange Pepper
If you pre-cook quinoa and allow it to cool ahead of time it takes 10 min to make, if not it takes approximately 45 min.
Place one cup of quinoa with two cups of water in a small pot, bring to a boil. Once the pot has come to a boil, turn down to a simmer, and cook until water has boiled off, remove from heat, sprinkle a little salt, fluff with a fork and put aside to cool.
Dice green onions, cucumber and orange pepper, halve the tomatoes. When the quinoa is cool add the lime juice, vegetables and cilantro if desired. Mix well
Add a dollop of greek yogurt and sliced avocado to serve.
