Not like your traditional pea soups, With its light and fresh flavour, this fast and easy soup can be as minty as you like.
Difficulty: Easy
Total Time: 30 min

Ingredients:
2 Tbsp butter
1 large onion chopped or 2 small onions
1 small head of lettuce, shredded.
2 lb thawed frozen petit pois peas
2.5 pt (I.5 L) chicken or vegetable stock
Lots of chopped fresh mint (to taste)
salt / pepper

Instructions:
Melt butter, in a large pot and cook onion until it is browned slightly
Stir in lettuce, peas & mint
Add stock, boil, reduce heat, cover and simmer for 15 min
Remove from heat and blend until smooth (I used a little hand held blender in the pot, you can pour it into a blender then back in the pot) season to taste (back in the pot) stir in cream & reheat gently (when adding the whipping cream make sure it is not too cold as it will curdle)
