A hearty healthy winter soup made with root vegetables, you can use any vegetables you want, this is our traditional family recipe.

Ingredients:
2 Tbsp salted butter
2 Onion chopped
1 Head of Garlic minced
4 Celery Stalks chopped
5-8 Beets chopped (depending on their size)
4 Parsnip chopped
4 Carrot chopped
1 Small Cabbage
2 Litres Chicken or Vegetable Stock
Salt and Pepper to taste
Instructions:
In a large pot, roast chopped onions and garlic in butter until brown, add vegetables and roast for at least 5 min (it helps seal in the flavour) pour in the stock and bring to a boil, lower to a simmer and simmer until all the veggies are cooked add salt and pepper to taste.
The longer you simmer it the better it tastes.
